Healthy "Tagalong" cookies.





Recipe from Chocolate-covered Katie

Ingredients:
1 cup almond flour
1/8 tsp salt
1/8 tsp baking soda
stevia to taste (I used two packets)
1.5 tbsp coconut or vegetable oil
1 tbsp almond milk
1 tsp vanilla extract
20 tsp peanut butter
1/2 cup chocolate chips

Prep:
Combine all liquid ingredients in one bowl. In a second bowl, combine dry ingredients (except chocolate chips and peanut butter). Mix the dry and wet ingredients and stir until it forms a dough you can form with your hands.

Roll out the dough between two sheets of parchment paper. With a small cookie cutter or the edge of a glass (I used a shot glass, because we're very classy around here) to cut the dough into twenty cookies. Freeze for 20-30 minutes, then transfer to a greased cookie sheet. Bake at 325F for 10-13 minutes.

Let cool for 10 minutes, then spread approximately 1 tsp peanut butter onto each cookie. Melt the chocolate and spread over top of the cookie. Wait for the chocolate to harden...and then eat away!
