Vegan Reeses eggs.


I think we all know just how much I love all Reeses holiday candies. Like, enough to eat my weight in them. If you're looking for a vegan, low-sugar substitution, these are delicious! They don't taste exactly like the Reeses version, but in a way I think they're even more decadent.

Ingredients:
1/4 cup peanut butter
dash salt
1/4 cup powdered sugar
2 Tbsp cocoa powder
2 Tbsp virgin coconut oil
Stevia to taste or 2 Tbsp agave syrup

Prep:
Mix the first three ingredients in a bowl until it becomes a dough. Add a bit more powdered sugar if it's too gooey or a little more peanut butter if it's too dry. Form dough into small, flattened ovals and lay on a parchment paper covered cookie sheet. Freeze for an hour or so.

Mix the cocoa and coconut oil in a shallow dish. Add Stevia/agave. Mix until it resembles chocolate sauce. Take one "egg" from the freezer at a time and dip in the chocolate sauce until the egg is covered. Cover each egg with chocolate and place them back onto the cookie sheet. Return to the freezer and let harden. They should be stored in the freezer, but you can pop one out and let it thaw a bit before eating or just eat it frozen!

Tip:
My chocolate sauce was liquidy and a tad bitter and I ended up with half of it leftover once I'd finished the eggs. But Ryan and I both thought these were delicious enough to dispute who was eating more than their share :)

Serves 6 at 63 calories per serving.

    and, i love this recipe- justin is OBSESSED with reeses, but i hate em since they are so chemically and milk chocolatey tasting.. ill have to make these!

  2. First off, these look amazing!!! I am doing a 30 day yeast free cleanse so I'll have to wait another 2 weeks...but man, when that 30 days are up I'm making these!!
