Crock-pot Recipe Link-up: Tomato Basil Parmesan Soup.

It's that time of the month again!
And by that, I mean it's CROCK-POT RECIPE LINK-UP time!
Duh.

Tomato Basil Parmesan Soup




Ingredients:
24 oz. petite diced tomatoes (in juice!)
1 cup diced onions
1 tsp oregano
1 tbsp basil
1/2 bay leaf
1/2 cup flour
4 cups Imagine No-chicken broth
1 cup Reduced fat grated Parmesan cheese
1 and 3/4 cup Fat-free half and half
1 tsp salt
1/2 tsp black pepper

Prep:
Mix tomatoes, onions, bay leaf, oregano, basil and broth in a crock-pot. Set on LOW and cook for 5-6 hours. At 5 1/2 hours, heat half & half on the stovetop at medium heat. Whisk in flour and stir continuously until mixture is thick. Remove from heat. One at a time, mix three cups of crock-pot mixture into the half & half mixture on the stovetop. When it's combined, transfer the mixture back into the crock-pot. Add salt, pepper and Parmesan and stir well. Cook another 20 minutes on LOW, then serve and enjoy! 

Tip:
Garlic bread sounded so tasty with this soup, but I didn't want to bulk up the calorie count too much, so I added garlic croutons! Yummm.   


Serves 10 at 90 calories per 1 cup serving.
