1/2 cup fat free mayo/miracle whip
1/4 cup fat free sour cream
2 tbsp chopped basil
2 tbsp skim milk
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp dry mustard (or substitute a squirt of wet mustard)
1/4 cup green onion, chopped
1.5 cups broccoli florets
1/2 cup frozen peas (thawed)
4 cups cooked fettuccine
4 oz. part-skim shredded cheddar
1 cup chopped tomato
1/2 red pepper, chopped
Combine first 8 ingredients (mayo through mustard) in a small bowl and set aside.
Steam broccoli and peas until crisp tender. Drain, then mix well with mayo mixture. Add remaining ingredients. Toss gently, cover and chill thoroughly.
Serves 4 at 343 calories per 1.75 cup serving.
