Ingredients:
2 cups (about one head) raw, grated (chopped in a food processor) cauliflower
2 egg whites
1 egg
2 cups part-skim shredded mozzarella
2 tsp oregano
4 tsp parsley
2 tsp garlic
Prep:
Preheat oven to 450F. Spray round medium-sized pizza pan with non-stick spray. In a medium bowl, mix cauliflower, egg, mozzarella and spices. Spread evenly across greased pan. Bake for 25 minutes. Remove from oven, add pizza sauce, toppings and cheese, then return to oven and cook until cheese is melted (about 10 minutes).
Tip:
The crust tastes delicious, but the consistency isn't as firm as real pizza crust. You'll probably want to eat it with a fork, not pick it up!
Serves about 7 at 175 calories per slice (this is crust only, without toppings).
