Ingredients:
1/4 cup chopped onion
1 can (15 oz) chickpeas, rinsed and drained
1/4 cup chopped parsley
1 1/2 tsp minced garlic
1 Tbsp flour
1 flax "egg" (1 Tbsp ground flaxseed + 3 Tbsp water)
1 tsp cumin
1/2 tsp coriander
1/2 tsp baking soda
1/2 tsp salt
Prep:
Whisk together the flaxseed and water, then refrigerate for 15 minutes. In the meantime, put all ingredients except flour and flax into a food processor and process until you have a chunky mixture. Stir chickpea mixture, flour and flax mixture until combined well. Shape into 8 patties and place on a lightly greased cookie sheet.
Preheat oven to 400F. Bake the patties for 10-15 minutes. Remove from oven and place patties into a lightly greased skillet. Cook over medium-high heat for a few minutes on each side until outside is browned.
Tip:
We like to eat this with hummus...because there's nothing wrong with a little chickpea overdose.
Serves 2 at 230 calories per serving.
