Loaded Quinoa Veggie Burgers.

Ingredients:
1/2 cup uncooked quinoa
4 green onions, sliced
2 cloves garlic
15 oz can black beans, drained and washed
1/4 cup dried breadcrumbs
1 large egg, lightly beaten
1 tbsp ground cumin
1 tbsp Italian seasoning
3/4 tsp salt
1/2 tsp pepper

Prep:
In a small pot, bring 3/4 cup water to a boil. Add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12 to 14 minutes; set aside.
In a food processor, mix cooked quinoa, scallions, garlic, beans, breadcrumbs, egg, cumin, Italian seasoning, salt, and pepper; pulse until combined but still slightly chunky.
Form mixture into four patties. Spray/grease a large non-stick skillet and cook burgers until browned, about 8 minutes per side.

Tip:
We topped our burgers with Pepperjack cheese. Yum! 

Serves 4 at 268 calories per serving.
